Ingredients for Lemon Blueberry Coffee cake


Cake

Betty Crocker lemon cake mix.

Ingredients needed for cake mix:

3 eggs

1/2 cup vegetable oil plus 2 tbsp to oil pan

1 cup water

2 cups fresh Blueberries (frozen should work too)

2 tbsp all purpose flour

Streusel Topping:


6 tablespoons packed light brown sugar

½ cup all-purpose flour

1 teaspoon ground cinnamon

¼ teaspoon salt

4 tablespoons butter

Instructions:


Preheat oven to 350 F.


Cake:

Prepare cake mix per box instructions.

sprinkled flour onto blueberries and toss in bowl until blueberries are evenly coated.

Mix blueberries into cake mix with spoon.

Oil 9 x13 cake pan

Pour mixture into cake pan.

Streusel Topping:

Add all ingredients into a bowl and mix with fork.

If your streusel is too moist you can add a little more flour.

Mix with fork until crumbly.

Sprinkle streusel topping evenly over cake mix.


Place in preheated oven on middle rack and bake for approximately 30 minutes or until an inserted toothpick comes out dry.


Remove from oven and let cool.
