Fluffy Pancake Recipe:
Ingredients:
Dry-Mix Ingredients
1 3/4 cups All-purpose flour
2/3 cup Sugar
4 tsp Baking powder
1 tbsp Kosher salt
Wet-Mix Ingredients
2 Eggs
3 1/4 cups Milk (whole milk or buttermilk)
1/4 cup Melted butter
Oil for cooking-Canola or vegetable

Instructions For Fluffy Pancakes:
-Sift the flour, sugar, baking powder and kosher salt together to combine into a large mixing bowl, set aside.
-Whisk the eggs, then add the milk and melted butter to combine well.
-Pour dry ingredients into wet ingredients, mix quickly until dry mix is moistened.
-Small lumps are fine.
-Allow to rest covered for 2-3 hrs.`
Notes:
-Each portion should be around 1/3 cup of batter
-cook in a nonstick frying pan in oil over a low-medium heat.
-Cook until it bubbles and flip over until golden brown, tender and completely cooked through.
